    Prepare marinade by whisking together soy sauce, brown sugar, minced garlic, grated ginger, sesame oil, sake (or rice vinegar), black pepper, and red chili flakes until the sugar dissolves and the mixture is evenly combined.

    Set aside 2 tablespoons of marinade in a separate small bowl for basting; cover and refrigerate.

    Add beef cubes to the remaining marinade and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes, or up to 4 hours.

    If using wooden skewers, soak them in water for 20-30 minutes to prevent burning.

    Thread marinated beef onto skewers, leaving about 1/2 inch of space between pieces for even cooking.

    Preheat grill to medium-high heat (about 400-450°F / 205-230°C). Lightly oil the grates.

    Grill skewers 2-3 minutes per side, turning once. Baste with the reserved marinade during cooking to develop glaze.
