BBQ Sauce for Chicken Skewers

Chicken Skewers with BBQ Sauce

    Make the sauce base

    In a medium saucepan, whisk together ketchup, brown sugar, apple cider vinegar, honey, molasses, Worcestershire sauce, soy sauce, Dijon mustard, smoked paprika, garlic powder, onion powder, chili powder, salt, pepper, and liquid smoke until smooth.

    Simmer and reduce

    Place the saucepan over medium-low heat and bring to a gentle simmer. Cook for 6–8 minutes, stirring occasionally, until the sauce thickens and coats the back of a spoon.

    Finish the sauce

    Remove from heat and whisk in butter until glossy. Taste and adjust with a pinch more salt, pepper, or vinegar if needed.

    Prep the chicken skewers

    If using raw chicken, cut into 1-inch pieces and thread onto skewers. Preheat grill to medium-high heat.

    First glaze

    Brush a thin layer of the BBQ sauce over the skewers and let them sit 2–3 minutes to absorb.

    Grill and baste

    Grill the skewers, turning and brushing with more sauce every 4–5 minutes, until the chicken is cooked through (internal temperature 165°F / 74°C), about 10–12 minutes.

    Finish glaze

    In the last minute of cooking, brush with a final coat of sauce for a glossy finish.

    Rest and serve

    Remove from grill and let the skewers rest 2 minutes. Serve with extra BBQ sauce on the side.
