    Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with foil and slice the onion in half; reserve one half to slice into rings if desired. Arrange the onion half as a bed on the sheet to flavor the steaks.

    Make rub

    In a small bowl, combine kosher salt, black pepper, garlic powder, smoked paprika, and brown sugar. Stir in olive oil and apple cider vinegar to form a loose rub.

    Prepare steaks

    Pat ribeye steaks dry with paper towels. Rub each steak evenly with the rub, coating all surfaces. Let stand 15–30 minutes to absorb flavors.

    Sear

    Heat a heavy skillet (cast iron preferred) over high heat. Add a splash of olive oil and sear each steak 2–3 minutes per side until a deep crust forms.

    Brush the seared steaks with BBQ sauce and place them on the onion bed or a rack over the baking sheet. Bake in the hot oven for 6–10 minutes, depending on desired doneness (6–7 minutes for rare, 8–10 for medium). If you have a meat thermometer, aim for 125–130°F (52–54°C) for medium-rare.

    Remove steaks from the oven and rest for 5 minutes. Melt the butter and brush it over the steaks along with a final drizzle of BBQ sauce.
