Salad

  1. 1

    Prepare the Salad

In a large bowl, combine mixed greens, halved cherry tomatoes, chopped cucumber, thinly sliced red onion, and crumbled feta cheese.

  2. 2

    Dress the Salad

Drizzle the balsamic vinaigrette over the salad, then toss gently to combine all ingredients.

Entree

  1. 3

    Marinate the Chicken

In a mixing bowl, combine olive oil, minced garlic, chopped thyme, salt, and black pepper. Add the chicken breasts and coat them evenly in the marinade. Allow to marinate for at least 30 minutes.

  2. 4

    Cook the Chicken

Preheat your grill or skillet over medium-high heat. Cook the marinated chicken breasts for 6-7 minutes on each side or until cooked through and juices run clear. Remove from heat and let rest for 5 minutes before slicing.

Side

  1. 5

    Prepare the Asparagus

Trim the woody ends from the asparagus and place them in a bowl. Drizzle with olive oil and squeeze half of the lemon juice over them.

  2. 6

    Roast the Asparagus

Spread the asparagus on a baking sheet and sprinkle with salt and pepper. Roast in a preheated oven at 400°F (200°C) for about 12-15 minutes, until tender but still slightly crisp.

  3. 7

    Finish the Asparagus

Once roasted, remove from the oven and sprinkle with grated Parmesan cheese and the remaining lemon juice before serving.
