Preparation Steps
Prepare the Shrimp
In a large pot, bring salted water to a boil. Add the shrimp and cook for about 2-3 minutes, or until they turn pink and opaque. Be careful not to overcook. Drain and rinse the shrimp under cold water to stop the cooking process.
Make Avocado Mash
In a mixing bowl, mash the avocados with a fork. Add the freshly squeezed lime juice, salt, and black pepper, mixing well until smooth. Set aside.
Prepare Tortillas
In a skillet, heat olive oil over medium heat. Lightly toast the corn tortillas for about 30 seconds on each side until they are warm and pliable. Keep them warm by wrapping in a clean towel.
Assemble the Shrimp Cocktail
On a serving platter, arrange the cooked shrimp. Drizzle with Jamaican cocktail sauce and sprinkle chopped cilantro on top. Serve alongside the avocado mash and warm corn tortillas.
