Begin by preheating your oven to 375°F (190°C). Rinse the sweet baby bell peppers, jalapenos, and habaneros thoroughly under cold water. Cut the tops off the sweet baby bell peppers and remove the seeds from the jalapenos and habaneros for less heat, if desired. Set aside.

In a mixing bowl, combine the crumbled bacon and gorgonzola cheese. Mix well until the bacon and cheese are thoroughly incorporated to create a flavorful filling.

Stuff the Peppers
Using a small spoon, carefully stuff each of the sweet baby bell peppers with the bacon and gorgonzola mixture until they are full. For the jalapenos and habaneros, consider leaving the stuffing level just below the rim of the pepper for even cooking.
