    Prepare the Pork Loin

    Preheat your oven to 400°F (200°C). Season the pork loin with salt and black pepper on all sides.

    Sear the Pork Loin

    In an oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the pork loin and sear for about 3-4 minutes on each side until browned.

    Add Hoisin Glaze

    In a small bowl, mix the hoisin sauce, minced garlic, and grated ginger. Brush the mixture over the seared pork loin.

    Roast the Pork

    Transfer the skillet to the preheated oven and roast for about 25-30 minutes, or until the internal temperature reaches 145°F (63°C).

    Cook the Mac & Cheese

    While the pork is roasting, cook the macaroni according to package instructions. Drain and return to the pot.

    Combine Ingredients

    Add butter and milk to the macaroni, stirring to combine. Add the cheddar cheese and mix until melted and creamy.

    Serve

    Once the pork is done, let it rest for 10 minutes before slicing. Serve with kimchi on the side and a generous portion of mac & cheese.
