Method
Preparing the Sushi Rice
Rinse the Rice
In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear. This removes excess starch.
Cook the Rice
In a medium saucepan, combine the rinsed rice and 2.5 cups of water. Bring to a boil over high heat. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and water is absorbed.
Season the Rice
In a small bowl, combine the rice vinegar, sugar, and salt. Microwave for 30 seconds to dissolve the sugar and salt. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow to cool.
Assembling the Poke Bowl
Prepare the Toppings
Dice the fresh ahi tuna and avocado into bite-sized pieces. Slice the green onions.
Assemble the Bowl
In a serving bowl, start with a base of sushi rice. Top with diced tuna, avocado, seaweed salad, and sliced green onions.
Finish with Garnishes
Sprinkle sesame seeds over the top and drizzle with soy sauce. Add sriracha if desired for an extra kick.
