Prepare the Ingredients

Cut the beef chuck into bite-sized pieces. Peel and cube the potatoes into 1-inch pieces. Chop the onion into small pieces.

Cooking

Cook the Beef

In a large pot, heat a tablespoon of oil over medium heat. Add the beef and brown on all sides. Once browned, remove the beef and set aside.

Sauté the Onion

In the same pot, add the chopped onion and sauté until translucent, about 3-4 minutes.

Add Curry Paste and Spices

Stir in the massaman curry paste, bay leaves, and cinnamon stick. Cook for another 2 minutes until fragrant.

Combine Ingredients

Return the browned beef to the pot. Add the potatoes, coconut milk, and beef broth. Stir to combine.

Season the Curry

Add fish sauce and brown sugar. Stir well, bring to a boil, then reduce heat to low.

Simmer

Cover and let the curry simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors meld.

Add Peanuts

In the last 10 minutes of cooking, stir in the peanuts.

Serving

Garnish and Serve

Serve the Massaman Curry hot, garnished with fresh cilantro and lime wedges on the side.
