Mousse Base Preparation
- 1
Melt the Chocolate and Butter
In a heatproof bowl, combine the semisweet chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.
- 2
Whip the Eggs and Sugar
In a separate bowl, whisk together the eggs and granulated sugar until the mixture is pale and slightly thickened, about 3-5 minutes.
- 3
Combine Mixtures
Gently fold the melted chocolate mixture into the egg mixture using a rubber spatula until fully combined. Add the vanilla extract and mix gently.
Whipped Cream Preparation
- 4
Whip the Cream
In a large mixing bowl, pour the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, beat on medium-high speed until soft peaks form.
- 5
Fold in Whipped Cream
Carefully fold the whipped cream into the chocolate mixture until no white streaks remain. Be gentle to keep the mixture airy.
Chill and Serve
- 6
Chill the Mousse
Spoon the mousse mixture into individual serving cups or bowls. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.
- 7
Garnish and Serve
Before serving, top each mousse with chocolate shavings and fresh berries as desired.
