Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 200°C (390°F). Grease four ramekins with butter and dust with flour to prevent sticking.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Heat in the microwave in 30-second intervals, stirring until fully melted and smooth.

  3. 3

    Whisk Eggs and Sugar

In a separate bowl, whisk together the granulated sugar, large eggs, and egg yolks until the mixture is pale and slightly thickened.

  4. 4

    Combine Mixtures

Gradually pour the melted chocolate mixture into the egg mixture, stirring continuously to combine. Add the vanilla extract and a pinch of salt, and mix well.

  5. 5

    Fold in Flour

Sift in the all-purpose flour and gently fold the mixture until just combined. Be careful not to overmix.

Baking

  1. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

  2. 7

    Bake

Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, or until the edges are set but the center is still soft.

  3. 8

    Cool Slightly

Remove the ramekins from the oven and let them cool for about 1-2 minutes. This will help the molten center to set slightly.

  4. 9

    Serve

Carefully invert each ramekin onto a plate. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream.
