Tartare Preparation

1. Prepare the Tartare

In a mixing bowl, combine the finely chopped steelhead trout, sea beans, shallot, and capers. Drizzle with lemon juice and olive oil. Gently mix until well combined. Season with salt and pepper to taste.

2. Chill the Mixture

Cover the bowl with plastic wrap and refrigerate for at least 15 minutes to allow the flavors to meld.

3. Prepare the Dill Cream

In a separate bowl, mix together chopped dill with sour cream or Greek yogurt, adding a pinch of salt and pepper. Adjust seasoning to taste.

4. Serve

Using a ring mold, carefully plate the tartare mixture on individual serving plates. Top with dill cream and serve with Old Bay chips on the side.
