Pappardelle and Mushroom Bolognese

Cooking Instructions

    Cook the Pappardelle

    Bring a large pot of salted water to a boil. Add the pappardelle pasta and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Mushroom Bolognese

    In a large skillet, heat olive oil over medium heat. Add the diced onion, garlic, carrots, and celery. Sauté until the vegetables are soft, about 5-7 minutes.

    Add the Mushrooms

    Add the chopped mushrooms to the skillet and cook until they release their moisture and become tender, about 5 minutes.

    Add Tomato Ingredients

    Stir in the tomato paste, canned crushed tomatoes, vegetable broth, oregano, basil, salt, and black pepper. Bring the mixture to a simmer and cook for about 15-20 minutes, stirring occasionally.

    Combine and Serve

    Toss the cooked pappardelle with the mushroom bolognese sauce until well coated. Serve hot, topped with grated parmesan cheese and fresh basil.
