Crispy Salsify Directions

1. Prepare the Salsify

Peel the salsify and cut it into thin sticks. Place the sticks in a bowl of water with a splash of lemon juice to prevent browning.

2. Set up the Breading Station

In three separate bowls, place flour in the first bowl, beaten eggs in the second, and breadcrumbs mixed with salt and pepper in the third.

3. Bread the Salsify

Remove the salsify sticks from the water, pat them dry, then dip each stick into the flour, followed by the egg, and finally coat them with breadcrumbs.

4. Fry the Salsify

In a deep skillet, heat the vegetable oil over medium heat. Once hot, fry the breaded salsify sticks in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
