    Make the Crust

    Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until crumbly. Press the mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then set aside to cool.

    Prepare the Filling

    In a large bowl, beat the softened cream cheese until smooth. Gradually add the sugar, mixing until well combined. Add the Meyer lemon juice, zest, eggs, and vanilla extract. Mix until creamy and fully incorporated.

    Bake the Cheesecake

    Pour the filling over the cooled crust in the springform pan. Bake for 50-60 minutes, or until the center is set but has a slight jiggle. Turn off the oven and let the cheesecake cool in the oven with the door ajar for about 1 hour.

    Prepare the Burnt Sugar Topping

    In a small saucepan, combine sugar and water over medium heat. Stir until the sugar dissolves. Continue to cook without stirring until the mixture turns a deep amber color. Remove from heat and let cool for a few minutes before drizzling over the cooled cheesecake.

    Chill and Serve

    Refrigerate the cheesecake for at least 4 hours or overnight. Before serving, drizzle the burnt sugar topping over the cheesecake.
