Prepare the Butternut Squash
Preheat the oven to 400°F (200°C). Toss the butternut squash cubes with olive oil, salt, and pepper, then spread them on a baking sheet. Roast for 25-30 minutes until tender.

Blend the Mixture
Once the squash is roasted, let it cool slightly. In a blender or food processor, combine the roasted squash, heavy cream, eggs, Parmesan cheese, nutmeg, salt, and pepper. Blend until smooth.

Prepare the Baking Dish
Grease a baking dish with olive oil. Pour the butternut squash mixture into the dish.

Bake the Sformato
Place the baking dish in the oven and bake for 45-50 minutes, or until the top is set and slightly golden.

Cool and Serve
Remove from the oven and let it cool for 10 minutes. Serve warm, topped with salsa macha and crispy leeks.
