Prepare the Chicken
In a bowl, toss the chicken breast with jerk seasoning and olive oil. Allow it to marinate for at least 30 minutes.

Assemble the Quesadillas
Place a tortilla on a flat surface. Layer half of the tortilla with shredded pepper jack cheese, sliced jerk chicken, and a bit more cheese. Fold the tortilla in half.

Cook the Quesadillas
In a skillet over medium heat, cook the folded quesadilla for 3-4 minutes on each side until golden brown and the cheese is melted. Repeat for all tortillas.

Serve
Cut the quesadillas into wedges and serve with diced tomato, shredded lettuce, sour cream, and salsa on the side.
