Prepare the Catfish
Pat the catfish fillets dry with paper towels. Season both sides generously with blackening seasoning.

Heat the Oil
In a large skillet, heat olive oil over medium-high heat until hot.

Blacken the Catfish
Carefully place the seasoned catfish fillets in the hot skillet. Cook for about 3-4 minutes on each side, or until the fish is cooked through and has a dark crust.

Prepare the Plate
Once cooked, remove the catfish from the skillet and let it rest for a minute. Serve the blackened catfish fillets on a plate with Jamaican relish and Creole tartar sauce on the side.
