    Prepare the Papitas

    Heat olive oil in a skillet over medium heat. Add the diced potatoes and cook until golden brown and crispy, about 10-12 minutes. Season with salt and pepper to taste.

    Cook the Bacon

    In another skillet, cook the bacon over medium heat until crispy. Remove from the skillet and drain on paper towels.

    Cook the Eggs

    In the same skillet used for bacon, crack the eggs and cook them to your preferred style (scrambled, sunny-side-up, etc.). Season with salt and pepper.

    Assemble the Taco

    On each sopa, spread a layer of homemade beans. Top with two slices of bacon, one cooked egg, and a generous serving of papitas. Drizzle with red or green chile sauce.
