Preparation

    Boil the Eggs

    Place the eggs in a saucepan and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, cover the pan, remove from heat, and let sit for 12 minutes.

    Cool the Eggs

    After 12 minutes, transfer the eggs to a bowl of ice water to cool for at least 5 minutes. This will make peeling easier.

    Peel the Eggs

    Once cooled, gently tap the eggs on the counter to crack the shell. Peel the eggs under running water to help remove the shell easily.

Making the Filling

    Prepare the Filling

    Cut each egg in half lengthwise. Remove the yolks and place them in a mixing bowl. Add mayonnaise, Dijon mustard, white vinegar, salt, black pepper, and paprika to the yolks.

    Mix the Filling

    Using a fork, mash the yolk mixture until smooth and well combined. Taste and adjust the seasoning if necessary.

Assembly

    Fill the Egg Whites

    Using a spoon or a piping bag, fill the egg white halves with the yolk mixture.

  2. 7

    Garnish

    Sprinkle additional paprika on top for garnish and add chopped chives or parsley if desired.
