Preparation
Prepare the Chicken
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and black pepper on both sides.
Marinate the Chicken
In a small bowl, mix the olive oil, lemon juice, minced garlic (from the cloves), and chopped fresh rosemary. Pour this mixture over the chicken breasts and let marinate for at least 30 minutes.
Chop Vegetables
While the chicken is marinating, chop your seasonal vegetables into bite-sized pieces.
Cooking
Bake the Chicken
Place the marinated chicken breasts in a baking dish and bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
Sauté the Vegetables
In a large skillet over medium heat, add a tablespoon of olive oil. Once hot, add the chopped seasonal vegetables and sauté for about 5-7 minutes, until they are tender but still crisp. Season with salt and pepper to taste.
Serving
Plate the Dish
Once the chicken is thoroughly cooked, slice it and serve it over a bed of sautéed seasonal vegetables. Drizzle with a bit of extra virgin olive oil and garnish with lemon zest and fresh parsley.
