Prepare the Vegetables

Wash and chop the fresh seasonal vegetables into bite-sized pieces. Common choices include zucchini, bell peppers, and asparagus.

Marinate the Beef

In a bowl, mix the olive oil, sea salt, black pepper, and chopped fresh herbs. Add the beef cuts and thoroughly coat them with the marinade. Let it sit for at least 30 minutes at room temperature.

Prepare the Fruits

Wash the fresh fruits thoroughly. If using stone fruits, pit and slice them into wedges. If using berries, simply set them aside for plating.

Cooking

Cook the Beef

Preheat a grill or a skillet over medium-high heat. Cook the marinated beef for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Remove from heat and let rest for 5 minutes.

Sauté the Vegetables

In the same skillet or on the grill, add the chopped vegetables and sauté for about 5-7 minutes, or until they are tender yet still crisp.

Plating

On a serving plate, arrange the sautéed vegetables as a base. Slice the rested beef and place it on top of the vegetables. Garnish with fresh fruits and drizzle balsamic glaze over the dish.
