Preparation

    Prepare the Nut Filling

    In a food processor, combine the walnuts, granulated sugar, and ground cinnamon. Pulse until the mixture is finely chopped but not pasty. Set aside.

    Prepare the Phyllo Dough

    Thaw the phyllo dough in the refrigerator overnight or at room temperature for a few hours before using. Keep it covered with a damp cloth to prevent it from drying out during preparation.

Assembly

    Layer the Phyllo Dough

    Preheat the oven to 350°F (175°C). Melt the unsalted butter in a saucepan. Brush a 9x13 inch baking dish with melted butter. Lay one sheet of phyllo dough in the dish and brush it with melted butter. Repeat this process, layering 8 sheets of phyllo, brushing each with butter.

    Add the Nut Filling

    Evenly spread half of the walnut mixture over the layered phyllo dough. Layer another 5 sheets of phyllo on top, brushing each with butter. Spread the remaining walnut mixture over this layer and top with another 8 sheets of phyllo, brushing each with melted butter.

    Cut the Baklava

    Using a sharp knife, carefully cut the baklava into diamond or square shapes. Make sure to cut through all the layers of phyllo.

Baking

    Bake the Baklava

    Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the baklava is golden brown and crisp.

Making the Syrup

    Prepare the Sugar Syrup

    While the baklava is baking, combine the water, sugar, honey, and vanilla extract in a saucepan. Bring to a boil, then reduce the heat and simmer for about 10 minutes. Remove from heat and let cool.

    Add Syrup to Baklava

    Once the baklava is done baking, remove it from the oven and immediately pour the cooled syrup evenly over the hot baklava. Allow it to soak for at least 4 hours or overnight before serving.
