Method

Falafel

    Prepare the Chickpeas

    Soak 1 cup of chickpeas in water overnight. Drain and rinse.

    Blend Ingredients

    In a food processor, combine soaked chickpeas, parsley, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Blend until a coarse mixture forms.

    Shape the Falafel

    Form the mixture into small balls or patties.

    Fry the Falafel

    Heat oil in a deep pan over medium heat. Fry the falafel until golden brown, about 3-4 minutes on each side. Drain on paper towels.

Hummus

    Blend Ingredients

    In a food processor, combine 1 cup of chickpeas, tahini, garlic, lemon juice, olive oil, and salt. Blend until smooth.

    Adjust Consistency

    Add water, 1 tablespoon at a time, until desired consistency is reached. Taste and adjust salt if necessary.

    Garnish

    Transfer to a serving dish and sprinkle with paprika.

Tabbouleh

    Prepare Bulgur Wheat

    Soak the bulgur wheat in boiling water for about 20 minutes. Drain and fluff with a fork.

    Chop Vegetables

    Finely chop parsley, mint, tomato, and cucumber.

    Mix Ingredients

    In a large bowl, combine bulgur, parsley, mint, tomato, cucumber, lemon juice, olive oil, and salt. Mix well.

    Chill

    Refrigerate for at least 30 minutes before serving.

Grape Leaves

    Prepare Filling

    In a pan, sauté the chopped onion in olive oil until soft. Add rice, parsley, salt, pepper, and lemon juice. Cook for 5 minutes.

    Stuff Grape Leaves

    Lay a grape leaf flat, place a tablespoon of filling near the stem end, and roll tightly. Repeat until all filling is used.

    Cook Grape Leaves

    Place stuffed grape leaves in a pot, cover with water, and simmer for about 30-40 minutes until rice is tender.
