    Rinse the Lentils and Rice

    In a fine-mesh sieve, rinse the lentils under cold water until the water runs clear. Do the same with the long-grain rice.

    Chop the Vegetables

    Peel and thinly slice the onions. Mince the garlic cloves. Peel and dice the carrot into small cubes.

Cooking

    Cook the Onions

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook until they are caramelized and golden brown, about 15-20 minutes. Stir occasionally to prevent burning.

    Add Garlic and Spices

    Add the minced garlic, cumin, coriander, paprika, salt, and black pepper to the caramelized onions. Stir and cook for another 2-3 minutes until fragrant.

    Add Lentils and Water

    Add the rinsed lentils to the pot, followed by 3 cups of water. Bring to a boil, then reduce the heat to a simmer. Cover and cook for 20 minutes.

    Add Rice and Carrots

    After 20 minutes, add the rinsed rice and diced carrot to the pot. Stir to combine, then cover and continue to cook for another 20 minutes, or until both the lentils and rice are tender and the water has been absorbed.

    Finish with Olive Oil

    Once cooked, remove from heat and drizzle with the remaining 2 tablespoons of olive oil. Fluff with a fork to combine.

    Garnish and Serve

    Chop fresh parsley and sprinkle over the top. Serve with lemon wedges on the side for squeezing over the dish.
