Preparation of Filling

    Rinse and Soak Rice

    Rinse the long-grain rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.

    Sauté Onions

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent, about 5 minutes.

    Mix Filling Ingredients

    In a large bowl, combine the soaked rice, sautéed onions, chopped parsley, dill, chopped tomato, lemon juice, salt, and pepper. Mix well until all ingredients are evenly distributed.

    Prepare Grape Leaves

    If using jarred grape leaves, rinse them under cold water to remove excess brine. If using fresh leaves, blanch them in boiling water for 1-2 minutes until pliable.

    Fill and Roll

    Lay a grape leaf, vein side up, on a flat surface. Place a tablespoon of the filling near the stem end of the leaf. Fold the sides over the filling and then roll from the stem end to the tip, creating a tight roll. Repeat with remaining leaves and filling.

    Prepare Cooking Pot

    In a large pot, place a few grape leaves at the bottom to prevent sticking. Arrange the rolled grape leaves seam side down in the pot, packing them tightly.

    Add Water and Lemon

    Pour 2 cups of water into the pot and add lemon slices on top of the grape leaves. Drizzle remaining olive oil over the top.

    Simmer

    Cover the pot and bring to a gentle simmer over medium heat. Reduce heat to low and let cook for about 45 minutes or until the rice is tender and the grape leaves are soft.

    Serve

    Once cooked, remove from heat and let sit for 10 minutes before serving. Serve warm or at room temperature, with additional lemon wedges if desired.
