Prepare the Kibbee

    Soak the Bulgar Wheat

    In a large bowl, combine the bulgar wheat and boiling water. Cover and let it soak for about 30 minutes until the bulgar is tender and has absorbed the water.

    Sauté Onions and Garlic

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant.

    Combine Ingredients

    In a large mixing bowl, combine the soaked bulgar wheat, sautéed onions and garlic, mashed chickpeas, toasted pine nuts, chopped parsley, ground cinnamon, allspice, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

    Shape the Kibbee

    Preheat your oven to 375°F (190°C). Grease a baking dish with a little olive oil. Press half of the kibbee mixture into the bottom of the dish evenly.

Add the Topping and Bake

    Spread the Remaining Mixture

    Layer the remaining kibbee mixture evenly on top, pressing gently to form a smooth surface.

    Prepare the Topping

    In a small skillet, heat 2 tablespoons of olive oil over medium heat. Add the toasted pine nuts and paprika, stirring for about a minute until fragrant. Drizzle this mixture over the kibbee.

    Bake

    Cover the baking dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15 minutes or until the top is golden brown.

    Allow the kibbee to cool slightly before cutting into squares. Serve warm or at room temperature.
