    Prepare the Cabbage

    Bring a large pot of water to a boil. Carefully remove the core from the cabbage and gently place the whole head into the boiling water. Blanch for about 2-3 minutes until the outer leaves are tender. Remove from the water and let it cool slightly.

    Prepare the Filling

    In a large skillet, heat the olive oil over medium heat. Add the diced onion, bell pepper, carrots, and mushrooms. Sauté for about 5-7 minutes until softened. Stir in the cooked rice, minced garlic, salt, black pepper, oregano, and basil. Mix well and cook for an additional 2-3 minutes. Remove from heat and let it cool.

    Assemble the Rolls

    Once the cabbage has cooled, carefully peel off the outer leaves. For each leaf, cut off the thick part of the stem to make it easier to roll. Place about 2-3 tablespoons of filling at the base of each leaf, fold in the sides, and roll it up tightly. Repeat with remaining leaves and filling.

    Prepare the Tomato Sauce

    In a medium bowl, combine the canned diced tomatoes, tomato paste, sugar, and Italian seasoning. Mix well.

    Cook the Rolls

    Preheat your oven to 350°F (175°C). Spread a thin layer of the tomato sauce at the bottom of a baking dish. Place the assembled cabbage rolls seam-side down in the dish and cover them with the remaining tomato sauce. Cover the dish with aluminum foil.

    Bake

    Bake in the preheated oven for 30-35 minutes, or until the cabbage is tender and the flavors have melded together. Remove from the oven and let cool for a few minutes before serving.
