Kibbee Mixture

Method

Preparation of Kibbee Mixture

    Soak Bulgur

    Place the fine bulgur wheat in a large bowl and cover it with water. Let it soak for about 30 minutes until it absorbs the water and softens. Drain any excess water.

    Mix Ingredients

    In a large mixing bowl, combine the soaked bulgur wheat, ground lamb or beef, finely chopped onion, chopped parsley, toasted pine nuts, ground cumin, ground cinnamon, salt, and black pepper. Mix everything thoroughly until well combined.

    Add Olive Oil

    Drizzle the olive oil over the kibbee mixture and mix again until the oil is evenly distributed.

Preparation of Topping

    Cook Meat for Topping

    In a skillet over medium heat, add the ground lamb or beef for the topping. Cook until browned, about 5-7 minutes.

    Add Onions and Spices

    Add the finely chopped onion, ground cinnamon, salt, and black pepper to the meat in the skillet. Cook until the onions are soft and translucent, about 3-5 minutes.

    Drizzle with Olive Oil

    Stir in the olive oil and mix well. Remove from heat and set aside.

Assembly and Baking

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Layer Kibbee Mixture

    In a greased baking dish, spread half of the kibbee mixture evenly to form the bottom layer.

    Add Meat Topping

    Spread the cooked meat mixture over the bottom layer of kibbee.

    Spread the remaining kibbee mixture on top of the meat layer, smoothing it out evenly.

    Using a sharp knife, score the top layer of kibbee into diamond shapes to help it cook evenly.
