Meat & Potato Stew

    Brown the Meat

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Cut the beef chuck roast into 1-inch cubes and add to the pot. Brown the meat on all sides, about 5-7 minutes.

    Cook the Vegetables

    Add the chopped onion and minced garlic to the pot. Sauté for about 3-4 minutes until the onion is translucent.

    Add Remaining Ingredients

    Stir in the chopped carrots, diced potatoes, beef broth, bay leaves, dried thyme, salt, and black pepper. Bring the stew to a boil.

    Simmer

    Reduce heat to low, cover the pot, and let the stew simmer for about 1.5 to 2 hours, or until the meat is tender and the vegetables are cooked through. Stir occasionally and adjust seasoning as needed.

    Serve

    Once the stew is ready, remove bay leaves and serve hot.

Rice

    Rinse the Rice

    In a medium saucepan, rinse the white rice under cold water until the water runs clear to remove excess starch.

    Boil Water

    Add the 4 cups of water and 1 teaspoon of salt to the saucepan. Bring to a boil over high heat.

    Cook the Rice

    Once boiling, add the rinsed rice. Stir briefly, then reduce the heat to low. Cover and let simmer for about 18-20 minutes, or until all the water is absorbed.

    Fluff and Serve

    Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
