Method

Preparing the Dough

  1. 1

    Mixing the Ingredients

In a large mixing bowl, combine the all-purpose flour, softened unsalted butter, confectioners' sugar, baking powder, and salt. Mix well using your hands until the mixture resembles coarse crumbs.

  2. 2

    Adding Rose Water

Add the rose water to the dough mixture. Knead the dough gently until it comes together into a smooth ball. Cover with plastic wrap and let it rest for 30 minutes.

Preparing the Filling

  1. 3

    Mixing the Filling

In a separate bowl, combine the chopped pistachios (or walnuts or dates), granulated sugar, cinnamon powder, and rose water. Mix well until all ingredients are evenly incorporated.

Assembling the Mamoul

  1. 4

    Forming the Cookies

Preheat the oven to 350°F (175°C). Take a small piece of dough (about the size of a golf ball) and flatten it in your palm. Place about a teaspoon of the filling in the center, then fold the dough over to enclose the filling. Pinch the edges to seal.

  2. 5

    Shaping the Mamoul

Using a mamoul mold or your hands, shape the filled dough into a decorative cookie. Repeat with the remaining dough and filling.

Baking

  1. 6

    Baking the Cookies

Place the shaped mamoul on a baking sheet lined with parchment paper. Bake in the preheated oven for about 20-25 minutes or until the bottoms are lightly golden.

  2. 7

    Cooling and Garnishing

Remove the mamoul from the oven and allow them to cool completely on a wire rack. Once cooled, dust with powdered sugar before serving.
