Method

Cooking Rice

  1. 1

    Rinse the Rice

Begin by rinsing the 2 cups of rice under cold water until the water runs clear. This helps to remove excess starch.

  2. 2

    Cook the Rice

In a large pot, combine the rinsed rice, 4 cups of water, and 1 tsp of salt. Bring to a boil over medium-high heat.

  3. 3

    Simmer

Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes, or until the rice is cooked through and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Preparing Vegetable Mix

  1. 4

    Sauté Vegetables

In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.

  2. 5

    Add Remaining Vegetables

Stir in the diced carrot, bell pepper, and peas. Cook for about 5-7 minutes until the vegetables are tender.

Seasoning and Combining

  1. 6

    Add Spices

Sprinkle in the cumin powder, turmeric powder, black pepper, and coriander powder. Mix well to coat the vegetables evenly with the spices.

  2. 7

    Combine Rice and Vegetables

Fluff the cooked rice with a fork and then gently fold it into the vegetable mixture in the skillet. Stir until fully combined and heated through.

Serving

  1. 8

    Garnish

Transfer the Makali to a serving dish. Garnish with chopped fresh cilantro and serve with lemon wedges on the side.

  2. 9

    Enjoy

Serve warm and enjoy your delicious Makali!
