Marinade
Lamb
Method
Marinade Preparation
- 1
Prepare the Marinade
In a large mixing bowl, combine Greek yogurt, olive oil, lemon juice, minced garlic, cumin, paprika, salt, black pepper, rosemary, and mint. Whisk together until smooth and well combined.
- 2
Marinate the Lamb
Add the cubed lamb to the marinade and stir well to ensure all pieces are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
Skewering and Cooking
- 3
Prepare the Skewers
If you are using wooden skewers, soak them in water for at least 30 minutes to prevent burning. If using metal skewers, you can skip this step.
- 4
Assemble the Kabobs
Once marinated, thread the lamb cubes onto the skewers, alternating with pieces of bell pepper, red onion, and cherry tomatoes to create a colorful display.
- 5
Preheat the Grill
Preheat your grill to medium-high heat. Ensure grates are clean and lightly oiled to prevent sticking.
- 6
Cook the Kabobs
Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is nicely charred and reaches your desired doneness (medium-rare is about 135°F/57°C).
- 7
Serve
Remove the kabobs from the grill and let them rest for a few minutes. Serve hot with a side of rice or pita bread and your favorite dipping sauce.
