Strain the Yogurt
Place a cheesecloth or a clean kitchen towel over a bowl. Pour the Greek yogurt into the cloth and sprinkle the salt over it. Gather the edges of the cloth and tie it securely. Let it drain in the refrigerator for at least 12 hours.

Prepare the Labna
After the yogurt has drained, transfer it to a mixing bowl. Add olive oil and finely chopped fresh herbs. Mix well until combined. Adjust seasoning with additional salt if needed. Serve in a bowl, drizzling more olive oil on top before serving.

Cook the Rice
In a medium saucepan, bring 1 cup of water or vegetable broth to a boil. Add the rice, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is fully cooked. Fluff with a fork and set aside to cool.

Sauté the Onion
In a skillet, heat a tablespoon of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Add the pine nuts and cook for an additional 2-3 minutes until the nuts are golden.

Mix the Filling
In a large bowl, combine the cooked rice, sautéed onion and pine nuts, lemon juice, salt, and black pepper. Mix well to create the stuffing.

Stuff the Grape Leaves
Lay a grape leaf flat on a clean surface with the stem end pointing towards you. Place about 1 tablespoon of the filling at the base of the leaf, fold the sides over the filling, and roll it up tightly from the base to the tip. Repeat with the remaining leaves and filling.

Cook the Stuffed Grape Leaves
Place the stuffed grape leaves seam-side down in a pot. Add enough water or vegetable broth to cover them. Place a heavy plate on top to keep them submerged. Cover the pot and simmer over low heat for about 45 minutes to 1 hour.

Serve
Once cooked, allow the grape leaves to cool slightly. Serve warm or at room temperature alongside the prepared labna.
