    Prepare the Ingredients

    Wash and slice the zucchini into rounds. Dice the tomatoes and chop the onion and cilantro. Mince the garlic.

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional minute.

    Cook the Stew

    Add the diced tomatoes, zucchini, vegetable broth, salt, black pepper, and paprika to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes until the zucchini is tender.

    Finish and Serve

    Stir in the chopped cilantro right before serving. Adjust seasoning if necessary.

Grape Leaves

    Prepare the Filling

    In a bowl, combine uncooked rice, ground beef or lamb, finely chopped onion, pine nuts, lemon juice, salt, black pepper, and chopped mint. Mix well.

    Prepare the Grape Leaves

    If using fresh grape leaves, blanch them in boiling water for a minute. If using jarred leaves, rinse them under cold water to remove excess brine.

    Stuff the Leaves

    Take one grape leaf, place about a tablespoon of filling at the base, fold in the sides, and roll tightly. Repeat this for all leaves and filling.

    Cook the Grape Leaves

    Place the stuffed grape leaves in a pot, cover with water, and simmer on low heat for about 45 minutes until the rice is cooked and the leaves are tender.
