    Prepare the Grape Leaves

    Bring a large pot of water to a boil and add salt. Carefully add the grape leaves and blanch for about 2-3 minutes until they soften. Remove them from the pot and place them in a colander. Rinse with cold water to stop the cooking process and set aside.

    Make the Filling

    In a mixing bowl, combine the short-grain rice, ground lamb or beef, chopped onion, parsley, mint, olive oil, lemon juice, salt, and black pepper. Mix well until all the ingredients are evenly combined.

Rolling the Grape Leaves

    Roll the Grape Leaves

    Lay a grape leaf on a flat surface, vein side up. Place about 1-2 tablespoons of the filling at the base of the leaf. Fold in the sides and roll tightly from the base to the tip. Repeat this process until all the leaves and filling are used.

    Cook the Grape Leaves

    In a large pot, arrange the rolled grape leaves snugly in a single layer. Pour the chicken or vegetable broth over the leaves. Add lemon slices and drizzle with olive oil. Cover the pot and simmer on low heat for about 45-60 minutes, or until the rice and meat are fully cooked.
