Falafel Preparation

    Soak Chickpeas

    Place dried chickpeas in a bowl and cover with water. Let them soak overnight (about 8 hours).

    Blend Ingredients

    Drain and rinse soaked chickpeas. In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and pepper. Blend until a coarse mixture forms.

    Shape Falafel

    Using your hands, form the mixture into small balls or patties about 1.5 inches in diameter.

    Fry Falafel

    In a deep skillet or pot, heat vegetable oil over medium heat. Fry the falafel in batches until golden brown on all sides (about 4-5 minutes). Drain on paper towels.

Grape Leaves Preparation

    Prepare Filling

    In a bowl, combine rice, ground meat, diced onion, tomato paste, lemon juice, salt, and pepper. Mix well.

    Roll Grape Leaves

    Lay a grape leaf on a flat surface, vein side up. Place a tablespoon of filling at the base of the leaf, fold in the sides, and roll tightly. Repeat with remaining leaves and filling.

    Cook Grape Leaves

    Layer the rolled grape leaves in a pot. Add water to cover the leaves. Bring to a simmer, cover, and cook for about 45 minutes until the rice and meat are cooked through.
