Filling

Grape Leaves

Method

Prepare the Filling

  1. 1

    Mix the Ingredients

In a large mixing bowl, combine the cooked rice, canned chickpeas, chopped parsley, chopped mint, lemon juice, olive oil, salt, black pepper, and ground cinnamon. Mix well until all ingredients are evenly combined.

Prepare the Grape Leaves

  1. 2

    Rinse and Soften

Carefully rinse the canned grape leaves under cold water to remove excess brine. Then, place them in a pot of boiling water for about 2-3 minutes to soften them. Drain and let cool.

Stuff the Grape Leaves

  1. 3

    Fill and Roll

Lay a grape leaf flat on a clean surface, vein side up. Place about 1-2 tablespoons of the filling near the stem end of the leaf. Fold the sides over the filling and roll tightly from the stem end to the tip. Repeat with the remaining grape leaves and filling.

Cooking

  1. 4

    Arrange and Simmer

In a large pot, arrange the stuffed grape leaves in a single layer. Pour the vegetable broth over the leaves and place a plate on top to keep them submerged. Cover the pot and simmer on low heat for about 30-35 minutes, or until the leaves are tender.

  2. 5

    Serve

Once cooked, carefully remove the stuffed grape leaves from the pot and serve warm with additional lemon wedges on the side.
