Cooking Liquid

Method

Preparation of Grape Leaves

  1. 1

    Preparing the Grape Leaves

If using fresh grape leaves, blanch them in boiling water for 1-2 minutes until softened. If using jarred leaves, rinse them under cold water to remove any brine.

Making the Filling

  1. 2

    Cook the Filling

In a large bowl, combine the rice, ground lamb or beef, chopped onion, parsley, dill, salt, black pepper, lemon juice, and olive oil. Mix well until all ingredients are combined.

Rolling the Grape Leaves

  1. 3

    Roll the Grape Leaves

Place a grape leaf on a clean surface with the vein side facing up. Put 1-2 tablespoons of the filling at the base of the leaf. Fold the sides over the filling and roll tightly from the base to the tip. Repeat with remaining leaves and filling.

Cooking

  1. 4

    Cook the Grape Leaves

In a large pot, arrange the rolled grape leaves seam-side down. Add the water or broth, and place lemon slices on top. Bring to a boil, then reduce to a simmer. Cover and cook for 30-40 minutes until the rice is fully cooked and the grape leaves are tender.
