Preparation of Marinade

Combine Marinade Ingredients
In a large bowl, whisk together the olive oil, lemon juice, minced garlic, paprika, ground cumin, salt, and black pepper until well combined.

Marinate Chicken
Cut the chicken breast into 1-inch cubes and add them to the marinade. Stir to coat all the pieces evenly. Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes, preferably 2 hours.

Prepare Vegetables
While the chicken is marinating, wash and cut the bell peppers and zucchini into 1-inch pieces, and slice the red onion into wedges. Leave the cherry tomatoes whole.

Soak Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

Assemble Kebabs
Once the chicken has marinated, thread the chicken cubes and prepared vegetables onto the skewers, alternating between chicken and vegetables as desired.

Preheat Grill
Preheat your grill to medium-high heat (about 375°F or 190°C).

Remove the kebabs from the grill and allow them to rest for a few minutes. Serve warm with your favorite dipping sauce or alongside rice.
