    Marinate the Chicken

    In a large bowl, combine olive oil, minced garlic, lemon juice, cumin, paprika, salt, and black pepper. Add the chicken breast cut into 1-inch pieces and mix well. Cover and refrigerate for at least 30 minutes, or up to 2 hours for best flavor.

    While the chicken is marinating, chop the bell peppers and red onion into 1-inch pieces.

    Assemble the Skewers

    Thread the marinated chicken pieces onto skewers, alternating with pieces of bell pepper and red onion. Leave a little space between each piece for even cooking.
