Cook Rice Noodles
Bring a pot of water to a boil. Add rice noodles and cook according to package instructions, usually about 4-5 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare Chicken
Slice the chicken breast into thin strips. Season lightly with salt and pepper.

Sauté Vegetables
In a large skillet or wok, heat vegetable oil over medium heat. Add sliced onion, and sauté until translucent, about 3-4 minutes. Add minced garlic and ginger, sauté for another minute until fragrant.

Add the chicken strips to the skillet and cook until browned and cooked through, about 5-7 minutes.

Add Vegetables
Mix in the julienned carrots and sliced bell pepper, and stir-fry for an additional 2-3 minutes.

Combine Ingredients
Add the cooked rice noodles to the skillet. Pour in soy sauce, fish sauce, and lime juice. Toss everything together until well combined and heated through, about 2-3 minutes.

Finish with Garnish
Remove from heat and stir in chopped cilantro and crushed peanuts. Adjust seasoning with chili flakes to taste.
