    In a large bowl, rinse the basmati rice under cold water until the water runs clear. Drain and set aside.

    Cut the chicken thighs into bite-sized pieces and season them with salt and black pepper.

Cooking

    Sauté Onions and Spices

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown. Stir in the minced garlic, grated ginger, and cumin seeds, cooking for 1-2 minutes until fragrant.

    Add the seasoned chicken pieces to the pot, cooking until they are browned on all sides. Stir in the coriander powder, turmeric powder, and the cinnamon stick.

    Mix in the tomato paste, ensuring it coats the chicken evenly. Cook for another 2-3 minutes.

    Pour in the chicken broth and bring the mixture to a boil. Reduce heat to low, cover, and let simmer for 20 minutes.
