Method

Preparing the Baklava

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Prepare the Phyllo Dough

    Thaw the phyllo dough in the refrigerator overnight. Once thawed, unroll and cover it with a damp cloth to prevent drying out.

    Melt the Butter

    In a saucepan, melt the unsalted butter over low heat. Once melted, remove from heat and let it cool slightly.

    Mix the Nut Filling

    In a bowl, combine the chopped walnuts, chopped almonds, ground cinnamon, and granulated sugar. Mix until well combined.

    Layer the Phyllo Dough

    Grease a 9x13 inch baking dish with some melted butter. Place one sheet of phyllo dough in the dish and brush it with melted butter. Repeat this process, layering 8 sheets of phyllo, brushing each with butter.

    Add Nut Filling

    Sprinkle a portion of the nut mixture (about 1 cup) over the phyllo layers. Repeat the layering process by placing 4 more sheets of phyllo, brushing each with butter, then adding another layer of nut mixture. Continue this process until all the nut mixture is used, finishing with 8 layers of phyllo dough on top, brushing each layer with butter.

    Cut the Baklava

    Using a sharp knife, cut the baklava into diamond or square shapes, cutting through all layers.

    Bake

    Bake in the preheated oven for about 45-50 minutes, or until the top is golden brown.

Preparing the Syrup

    Make the Syrup

    In a saucepan, combine water, granulated sugar, honey, vanilla extract, and lemon juice. Bring to a boil over medium heat, then reduce to a simmer.

    Simmer the Syrup

    Let the syrup simmer for about 10 minutes, stirring occasionally. Remove from heat and let it cool.

    Pour Syrup over Baklava

    Once the baklava is done baking, remove it from the oven and immediately pour the cooled syrup over the hot baklava, making sure to cover evenly.

    Let it Soak

    Allow the baklava to cool completely and soak in the syrup for at least 4 hours, or ideally overnight.
