Preparing the Kibbee

    Soak the Bulgur Wheat

    In a medium bowl, combine the bulgur wheat and water (or vegetable broth). Allow it to soak for about 30 minutes until it becomes soft and fluffy. Drain any excess liquid.

    Cook the Meat or Lentils

    In a skillet over medium heat, add the olive oil and sauté the chopped onion until translucent. If using meat, add the ground lamb or beef and cook until browned. If using lentils, cook them separately according to package instructions and then mix with the sautéed onions.

    Combine Ingredients

    In a large mixing bowl, combine the soaked bulgur wheat, cooked meat (or lentils), parsley, allspice, cinnamon, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Assembling and Baking

    Prepare the Baking Dish

    Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil.

    Layer the Kibbee

    Spread half of the kibbee mixture evenly on the bottom of the greased baking dish. Press down firmly to create an even layer.

    Add Topping

    In a small skillet, toast the pine nuts in olive oil until golden brown. Spread the toasted pine nuts over the kibbee layer. Add any additional spices if desired.

    Finish Layering

    Spread the remaining kibbee mixture over the pine nuts, pressing down gently. Drizzle with a little more olive oil on top.

    Bake the Kibbee

    Place the baking dish in the preheated oven and bake for 30-40 minutes or until the top is golden brown.
