Baba Ghanoush

Tabbouleh

Method

Baba Ghanoush

  1. 1

    Roasting the Eggplant

Preheat your oven to 400°F (200°C). Cut the eggplants in half lengthwise and score the flesh with a knife. Place them on a baking sheet cut side up and drizzle with olive oil. Roast for about 30-40 minutes until the flesh is soft and slightly charred.

  2. 2

    Preparing the Baba Ghanoush

Once the eggplants are roasted, let them cool slightly. Scoop the flesh into a food processor. Add tahini, garlic, lemon juice, salt, and cumin. Blend until smooth. Adjust seasoning to taste.

  3. 3

    Finishing Touches

Transfer the mixture to a serving bowl, drizzle with olive oil, and sprinkle with pomegranate seeds and chopped parsley before serving.

Tabbouleh

  1. 4

    Preparing the Bulgur

In a medium bowl, combine the bulgur wheat and boiling water. Cover and let it sit for about 20 minutes until the bulgur has absorbed the water and is tender.

  2. 5

    Chopping the Vegetables

While the bulgur is soaking, finely chop the tomatoes, cucumber, parsley, and mint.

  3. 6

    Assembling the Tabbouleh

Once the bulgur is ready, fluff it with a fork. Add the chopped vegetables, lemon juice, olive oil, and salt. Mix well to combine.

  4. 7

    Chilling

Cover the tabbouleh and let it chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
