In a food processor, combine 1 cup of cooked chickpeas, 1/4 cup of tahini, 2 tablespoons of olive oil, the juice of 1 lemon, and 1 garlic clove. Blend until smooth, adding water if necessary for desired consistency.

Roast 1 medium eggplant on an open flame or in the oven until charred. Let it cool, then scoop out the flesh and combine with 1/4 cup tahini, 2 tablespoons of lemon juice, 1 garlic clove, and salt to taste in a food processor. Blend until smooth.

In a bowl, combine 1 cup of finely chopped parsley, 1/2 cup of diced tomatoes, 1/4 cup of finely chopped mint, 1/2 cup of bulgur wheat, juice of 1 lemon, and 2 tablespoons of olive oil. Mix well and let sit for 30 minutes to absorb flavors.
