Chop the Vegetables
Finely chop the onion, carrot, celery, and garlic cloves. Set aside.
Cooking the Soup

Sauté the Base Ingredients
In a large pot, add a tablespoon of oil and heat over medium heat. Add the chopped onion, carrot, celery, and garlic. Sauté for about 5 minutes, or until the vegetables are softened.

Add Spices
Stir in cumin, turmeric, and paprika to the sautéed vegetables. Cook for an additional 2 minutes, allowing the spices to become fragrant.

Add Lentils and Broth
Add the red lentils and vegetable broth to the pot. Stir well to combine. Bring the mixture to a boil.

Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the lentils are tender.

Once the lentils are tender, stir in salt, black pepper, and lemon juice to taste. Adjust seasoning as needed.
