Marinate the Chicken
In a bowl, combine soy sauce, sake, grated ginger, minced garlic, salt, and black pepper. Add the chicken thighs and mix well. Cover and let marinate in the refrigerator for at least 30 minutes.

Prepare the Coating
In a separate bowl, mix cornstarch and all-purpose flour together.

Heat the Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 170°C (340°F).

Coat the Chicken
Remove the marinated chicken from the refrigerator. Take each piece and coat it evenly in the flour-cornstarch mixture, shaking off any excess.

Fry the Chicken
Carefully place the coated chicken pieces into the hot oil. Fry in batches to avoid overcrowding. Cook for about 5-7 minutes or until golden brown and cooked through.

Drain and Serve
Once cooked, remove the chicken from the oil and place it on a plate lined with paper towels to drain excess oil. Serve hot.
