Cooking Noodles

Boil the Noodles

Bring a pot of water to a boil. Add soba noodles and cook according to package instructions, typically 4-6 minutes. Stir occasionally to prevent sticking.

Drain and Rinse

Once cooked, drain the noodles in a colander and rinse under cold water to stop the cooking process. Set aside.

Preparing Vegetables and Tofu

Prepare the Tofu

Press the tofu to remove excess moisture, then cut it into bite-sized cubes.

Sauté the Tofu

In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the tofu cubes and sauté until golden brown on all sides, about 5-7 minutes. Remove from the skillet and set aside.

In the same skillet, add minced garlic and ginger, sauté for 1-2 minutes until fragrant. Add the mixed vegetables and stir-fry until tender-crisp, about 5 minutes.

In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, brown sugar, and chili flakes until well combined.

Final Assembly

Return the tofu to the skillet with the sautéed vegetables. Add the cooked soba noodles and pour over the sauce. Toss everything together until the noodles are well coated and heated through, about 2-3 minutes.

Transfer the Sosu Kaani to serving plates. Garnish with sesame seeds or green onions if desired and serve immediately.
